Fish to be Fit Chowder

1-1/2 pounds fresh grouper, snapper or other white fish
4 slices nitrite/nitrate free bacon
1 onion, chopped
1/2 cup chopped celery
3/4 green bell pepper, chopped
1-2 cloves garlic, finely chopped
2 medium red potatoes, cut into bite size pieces
14 oz can tomatoes, coarsely chopped
3 oz tomato paste
1 teaspoon worcestershire sauce
2 + cups fish stock**
sea salt/pepper to taste
1/4 cup fresh parsley

In a large pot, cut the bacon into pieces and fry until crisp. Take out and set aside. In the bacon drippings, saute the onion, celery, bell pepper and garlic until tender. Add the tomato paste and stir for a minute or tow. Add the tomatoes and their juice, the fish stock, worcestershire and salt and pepper to taste. Simmer for about 20 minutes. Add the potatoes and simmer for an additional 15 minutes. Add the fish and simmer another 15 minutes or until the potatoes are tender. Add stock as needed if chowder get too thick. Stir in the crumbled bacon and parsley.

Serves: 4 to 6
